Pork Fillets & baked Veges
This is a bargain hunters meal.
Pork fillets are a third of the price of beef fillets. They lend themselves to added flavours, add some baked veggies and you have a scrumptious meal on a budget.
INGREDIENTS
2 pork fillets
20 slices thin cut pancetta
Sweet potato, butternut pumpkin, red capsicum.
Marinade
1/3 cup light soy sauce
2 TBS brown sugar
2 tsp Worcestershire sauce
1 tsp Dijon Mustard
2 Garlic cloves crushed
1/8 tsp Ground black pepper
Method
Make marinade. Marinade one fillet for 1 hour.
Wrap the other one with pancetta.
Place both in rack, roast over coals until internal temp is about 72 C
about 30 mins
Slice veges, toss in oil, place in roasting try add a couple of knobs off butter and salt and pepper. Roast in med oven for about 30 mins.The chicken rub linked with the smokey flavour from the coals, lifts the chicken to another level, coupled with steamed sweet potato and carrots finished with butter and salt and pepper.
