Burnt Ends & Corn Biscuits
A typical American cowboy meal loaded with flavour and cooked the Australian way.
INGREDIENTS
Pork belly sliced
Pork rub + extra brown sugar
Brown sugar & butter for basting
Pork Rub
2 tsp sea salt
1 tsp ground cumin
1/2 tsp ground black pepper
1/2 tsp dried oregano
1/2 tsp brown sugar
1/4 tsp chilli powder
Sauce
1/2 cup BBQ sauce
1/2 cup honey
1/2 cup cherry preserves
1 TBS hot sauce
METHOD
Coat pork belly with pork rub and brown sugar. Place in grilling rack, grill (low heat) for about 40 mins. Turn and basting regularly.
Cube grilled pork. Place in baking dish pour over sauce. Bake for 40 mins low med heat.
CORN BISCUITS
3/4 cup yellow corn meal. (Polenta)
3/4 cup self raising flour
3/4 tsp baking powder
Pinch of salt
1 egg
1 TBS milk
1/2 TBS BBQ sauce
METHOD
Mix together dry ingredients add all other ingredients mix together well.
Fry in hot oil until brown on both sides and cooked through.
