CHICKEN and CHIPS


Grilled whole chicken with crunchy chips. What more can I say?


INGRIEDENTS

Whole small chicken

Chicken rub

Two medium white potatoes


METHOD

Half chicken, dry with paper towel, coat with olive oil, sprinkle with chicken rub, 

rub in well. Place chicken halves in grilling rack. Grill over coals for 45 mins turning regularly.


Slice potatoes into equal chip sizes, wrap in tea towel for 5 to 10 minutes.

Heat oil to 190C, Put chips in oil, cook until soft stirring occasionally.

When cooked drain and put in dish with lid, wrap in towel to keep warm. Rest for 30 minutes, the chips need to sweat. Reheat oil to 190C. Drain water off chips break up a little with fork. Put back in the oil cook until crispy. When cooked, drain put into dish with paper on the bottom, add salt NOW.
