Persian Duck Legs
PERSIAN DUCK LEGS
Persia. An ancient country in the middle east known for its advanced culture
and exquisite cuisine.
INGREDIENTS
2 duck Marylands
3 TBS olive oil
2 cups chopped onion
4 cups chicken stock
1 cup ground walnuts
1 tsp turmeric
1/2 tsp cinnamon
1/8 tsp nutmeg
2/3 cup treacle
1/4 cup honey
METHOD
In cast iron oven brown duck legs on both sides, remove. Add olive oil, chopped onion, cook until brown add turmeric, cinnamon, nutmeg, cook for 2 minutes adfd chicken stock, honey, treacle.
Heat ground walnuts in pan stirring until aromatic. Add to mixture add duck legs cook until tender about 90 minutes. When cooked remove duck legs, reduce by about 50%
Serve with steamed rice, corn.
