Pinkies and Prawns

PINKIES & PRAWNS

To buy, cook and enjoy seafood bought of the back of the boat that caught it.

For me that is a bucket list experience.

PINKIES, BUTTERFLIED, CRUMBED AND FRIED.

INGRIEDENTS                                                  

Butterflied pinkies

Egg

Plain Flour

Breadcrumbs

METHOD

Dip pinkies in flour rub in well, dip in whipped egg, dip in bread crumbs rub in well.

Fry in skillet until brown on both sides.

Serve on a bed of pesto and baby rocket leaves.

PINKIES GRILLED

Place a wedge of line inside the fish, drizzle with lime and  olive oil.

Place in grilling rack, grill over fire until  cooked 3 - 4 minute per side.

PRAWNS GRILLED

Peel prawns leaving the tail attached. Put about four on a skewer, drizzle with lime juice and olive oil. Fry in hot skillet until cooked. 3 - 4 minutes per side.

KAJMAK

Equal parts of danish feta, cream cheese and sour cream. 

Blend together with egg beaters.

PESTO

1/2 green capsicum

1 long green chilli

Small bunch coriander

1/2 cup kajmak

100 g ground brazil nuts

Blend together on food processor
