Marinated Pork Belly with Crispy Crackling

MARINATED PORK BELLY WITH CRISPY CRACKLING

Who does not enjoy pork crackling, add some marinated pork belly, green beans, rice and you have a meal fit for a king.

INGREDIENTS

Fresh pork belly skin on

Marinade

Green beans

Rice.

MARINADE

2/3 cup light soy

1/4 cup brown sugar

11/2 TBS Worcestershire sauce

2 tsp Dijon  mustard 

4 garlic crushed

1/4 tsp ground black pepper

METHOD

Leave belly uncovered skin up in fridge over night.

With sharp knife score belly skin only at 10mm  spacings.

Make a boat out of double aluminium foil, be sure it fits neatly around the belly. 

Pout olive oil on skin rub in add plenty of salt

Pour marinade in around belly making sure not to get any on the skin.

Bake in slow oven until meat is tender about 2 hrs.

Pour off marinade and reduce it down to make the sauce.

Place belly under hot grill until crackling bubbles

Stern rice and beans when needed.
