PORK RIBS & CHIPS
Who does not enjoy a rack of grilled pork ribs.
What better to accompany a rack of ribs than my absolute favourite, crunchy home made chips.
INGRIDIENTS
One rack of pork ribs. ( The ones with meat on them, no shiners here )
Two hard white potatoes.
PORK RUB
2 tsp sea salt
1tsp ground cumin
1/2 tsp ground black pepper
1/2 tsp dried oregano
1/2 tsp brown sugar
1/4 tsp chilli powder
Mix together and use liberally.
METHOD
Dry ribs coat with olive oil, sprinkle liberally with pork rub. Rub in well, place in grilling rack ready for grilling.
Wash, peel and slice potatoes. Wrap in tea towel for five minutes.
Heat oil to 180C. Cook chips until soft. Remove from oil, place in bowl with lid, wrap bowl in tea towel, leave to sweat for 30 mins.
Place ribs over coals, turn regularly until cooked.
Reheat oil to 190C cook chips until crunchy.
