Chicken Marylands and Veges

The chicken rub linked with the smokey flavour from the coals, lifts the chicken to another level, coupled with steamed sweet potato and carrots finished with butter and salt and pepper.

A great campfire meal.

Ingredients

2 Chicken Marylands.

1 Sweet potato.

2 Carrots.

CHICKEN RUB

  • 2 tsp sea salt

  • 2 tsp dried thyme

  • 1 tsp dreid oregano

  • 1 tsp onion flakes

  • 1 tsp ground coriander

  • 1/2 tsp mild chilli powder

  • 1/4 tsp freshly ground black pepper

Mix together and use liberally.

Method

  1. Coat marylands liberly with olive oil.

  2. Sprinkle with chicken rub. Rub in well.

  3. Place chicken in rack and put over coals, turn regularly.

  4. Chop up sweet potato and carrots, steam until tender.

Tips

Grill marylands for about 20 mins, internal temp should be about 75C when you take them off the fire. Drain veges, add butter and salt and pepper to taste. Serve and enjoy.
